The Best Carrot Cake Ever!

My mom actually found this recipe from allrecipes.com. It was the best carrot cake ever! My 4 yr old asked me to make it the other day, so of course I couldn't resist. After reading reviews, I ended up making a few changes.

Cake:
4 eggs
3/4 C applesauce
1/2 C veg oil
1 C white sugar
1 C brown sugar
2 tsp vanilla
2 C flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
3 C shredded carrots

Frosting:
1 package cream cheese, softened
1 stick of butter or spread, softened
About 2-3 cups powdered sugar
3+ tsp vanilla

Preheat oven to 350 degrees. Grease and flour a 9X13 baking dish. Glass works better because you can check the bottom to make sure it's not burning.

Mix together eggs, applesauce, oil, sugars and vanilla. Add and mix in flour, baking soda, baking powder, salt and cinnamon. Next mix in the carrots.



Pour into baking dish and cook for around 30-40 min, depending on your oven. It will be ready when a knife comes out clean.

This cake is so moist and yummy!



I make my own cream cheese frosting that is perfect for this cake. Mix in cream cheese, butter, vanilla and powdered sugar until smooth. Taste and add more powdered sugar or vanilla to your liking.
