Easy Chicken Enchilada Casserole

This is a dish we used to make at the kids camp when I worked there. I make it for potlucks and parties and people love it!

You will need:

4 chicken breasts (boiled/shredded)
(or those yummy cans of chicken from Costco!)
1 package of corn tortillas
1 large can of green enchilada sauce
Shredded Cheese (Cheddar, Mexican, or any kind you wish)
(Optional: olives, chilies, etc.)

Pour enchilada sauce in a separate pan. Coat tortillas with sauce and lay them on the bottom of the casserole dish (about 6). Sprinkle a layer of cheese, then a layer of shredded chicken. Pour enchilada sauce throughout the casserole as well. Keep layering tortillas, cheese, chicken until you get the thickness you want. Cook at 350 degrees for about 20-30 min, until cheese is melted and starting to brown. Serve with sour cream or salsa.

Can he come for dinner???
